Spicy Caesar Sando

This should really be called the umami sandwich because here’s what this sandwich does: kicks your 6th taste into OVERDRIVE. Caesar dressing is already umami-packed because of the parm and anchovies, and on top of that I threw in some miso and gochujang. It’s a dressing that awakens every single molecule inside your body and makes you just want to charge through a fuckin wall. And yea, the sandwich also had a gorgeous, crispy cornflake-crusted schnitzel, but who cares. That’s not what the sandwich is about.

Recipe

Serves 1

Spicy Caesar Salad

  • 3 cloves garlic
  • 4 anchovies
  • Juice of 1 lemon
  • 2/3 c shredded parm
  • 2 tbsp dijon
  • 1 tbsp miso
  • 1 tbsp gochujang
  • Black pepper to taste
  • 2 egg yolks
  • 1 1/2 c neutral oil
  • 1 head romaine chopped
  1. Start by finely mincing garlic. Sprinkle with course salt, and continue smearing/chopping until a garlic paste forms.
  2. Chop and smear anchovy filets, combine with garlic paste and turn into a homogeneous paste.
  3. In a mixing bowl, combine egg yolks, dijon, and garlic-anchovy paste. Whisk to combine. While vigorously whisking, slowly stream in oil until finished and dressing is emulsified.
  4. Add parm, lemon juice, black pepper, miso, and gochujang.
  5. In a separate bowl, mix romaine and desired amount of caesar dressing–the whole entire amount made will be too much.

Crispy Cornflake Schnitzel

  • 1 chicken breast
  • 2 cups cornflakes, lightly crushed
  • 1 cup all purpose flour
  • 2 eggs
  • Salt and pepper to taste + any additional seasonings you’d like
  1. Butterfly and pound out chicken until about 1/2 inch thick and even all over. Season.
  2. Dredge chicken in flour (with same seasonings added), lightly dusting the excess off. Dip in egg wash, let excess drip. Then, coat with corn flakes. Push the chicken into the cornflakes hard. Flip  and repeat. Continue this process until corn flakes are firmly stuck to the chicken.
  3. Heat a pan with about 1/4 inch of oil to 350ºF. If you don’t have a thermometer, dip a wooden spoon/chopstick into the oil–once air bubbles start coming out, you’re at the right temp. Shallow fry for about 5-6 min per side.

Blistered Cherry Tomatoes

  • 1 cup cherry tomatoes
  • Salt and pepper to taste
  1. Get a pan with olive oil smoking hot over high heat. Add tomatoes to the pan, and cook until charred and blistered, but they should still be slightly firm. Season with salt and pepper

Assembly

  1. Build sandwich using bread of choice.
  2. Lightly smear each piece of bread with the spicy caesar dressing. Add the spicy caesar salad, followed by the cornflake schnitzel, and then the tomatoes.
  3. Add the top bread layer and smush the sandwich a little bit so it stays neat when cutting.
