Salmon Tiradito

This dish should serve as a reminder to partake in passions with people who mutually hold them as well. I made this salmon tiradito with Paula, a content creator who makes beautiful dishes. She’s a chef in NYC that went to culinary school at Le Cordon Bleu, and I knew meeting with her would be an awesome learning experience for me. I love her cooking style of using lots fruits to incorporate sweetness and acidity in her dishes. The salmon tiradito  really represents her style, as the sauce had ingredients like passionfruit paste and guava, two ingredients I’ve never cooked with. This was one of the best raw fish dishes I’ve ever had and I will definitely be making it again.
