This is the final dish of my 7 days of mayonnaise series where I explore creative and exciting versions of my favorite condiment. Here, I took the concept of the sauce you’d find in a chicken tikka masala and turned it into a mayo. I made the base that you normally would make but used extra tomato paste instead of tomatoes to avoid a water final product. Instead of mixing in heavy cream, blended it with mayonnaise. I used it on a fried chicken sandwich to get chicken tikka masala but in sandwich for and it was UNBELIEVABLY GOOD.
