Fried Chicken Bao Bun

This is the first dish of my 7 Days of Mayonnaise series where I explore creative and exciting versions of my favorite condiment. This is a fried chicken bao bun with dill pickles and a kimchi-gochujang mayo. My favorite bun for fried chicken sandwiches is indeed the bao bun; I love the combination of such a soft, fluffy bun with the crunchy fried chicken inside. This sandwich was to die for and the mayo made it that much better–spicy, acidic, and umami from the kimchi and gochujang, and the toasted sesame oil took it to the next level.
