This is the sixth dish of my 7 days of mayonnaise series where I explore creative and exciting versions of my favorite condiment. Here, I took the concept of vodka sauce and turned it into a mayo–I made the base that you would with a vodka sauce, but instead of mixing in heavy cream, blended it with mayonnaise. Let me tell you, this is perfect for a chicken cutlet sandwich. It’s superior to vodka sauce since it doesn’t create a soggy mess, but you’re still getting all that glorious flavor you love out of your favorite pasta sauce.
