Chicken Banh Mi

This is the fourth dish of my 7 days of mayonnaise series where I explore creative and exciting versions of my favorite condiment. One sandwich that fights for my number one spot is the banh mi. Some sandwiches are too rich, or can leave you feeling super heavy–not this one. You have the savory protein, sweetness and acidity from the pickled veg, and bitterness and freshness from the herbs–this combination is the perfect bite. It’s simple, but that’s all you need to create the most perfectly balanced sandwich in the world. I took it a step further with the lemongrass-herb mayo, which was divine but feel free to make this recipe with just regular mayo.
