This is the third dish of my 7 days of mayonnaise series where I explore creative and exciting versions of my favorite condiment. The McDonald’s filet o’ fish sandwich is great in concept but terrible in execution. So, I decided to put that into my own hands. I upgraded the tartar sauce by using a garlic-infused oil (obviously the garlic itself too) as the base for the mayo; homemade brioche buns, which I made myself for the first time ever; and dill pickles from scratch; and a fried piece of fish with a collateral crisp unlike anything I’ve ever had. This took forever to make but it was perfection and well worth the effort.
